Vegan baklava cigars
180ml freshly squeezed orange juice
60ml maple syrup
½ Vanilla bean seeds removed
Zest of 1 lemon
1 ½tsp ground Cinnamon
Zest of 2 oranges
1/8tsp fine salt
75ml maple syrup
3 Filo Pastry Sheets 30x50
2tbsp Olive oil
1tbsp pistachio kennel finely chopped
1) Put strained orange juice, maple syrup and vanilla into a small pot and gently bring to the boil. Simmer on a very low heat until you get a thin syrup that coats on the back of a spoon. Set aside to cool.
2) Grind nuts coarsely not fine. Place ground nuts in a bowl with the salt cinnamon, lemon and orange zest, mix all dry ingredients well and add maple syrup to bind
3) Prepare baking tin by brushing it with little olive oil, cut your filo the size you want your cigar to look. Keep it under a damp towel as it dry’s quickly. Place the filo in front of your shortest side in front of you, brush it with oil. Spoon the required filling and evenly spread it across and start rolling the cigar tightly round the filling by folding the sides over the filling so to form a cigar finish. Rolling by applying some oil at the end for sticking. Carry on doing the same with the rest of filo.
4) Pre-heat oven to 180 ̊C, place cigars in a tin, brushed with oil. Bake for 25 minutes until golden brown, as soon as the cigar are ready brush them with cold syrup and sprinkle the pistachio on top.
